Look for a light-roasted Ethiopian or Kenyan coffee. These beans produce a cup that is typically bursting with fruit and/or floral notes, with a sweet edge and smooth mouthfeel similar to a robust tea.
IF YOU DO NOT LIKE CAFFEINE, BUZZ
Decaf coffees are a good option, but try to find a single-origin decaf if possible. Although the decaffeination process flattens many of a coffee’s high notes, single-origin beans (as opposed to blends) retain some of their distinct tasting notes even after the process. It may seem obvious, but you can also simply drink less regular coffee; maintain the experience while reducing the volume!

IF YOU HAVE A SWEET TOOTH
Be patient and let your coffee cool. There’s one delightful fact about fresh coffee: it gets sweeter as it cools. In fact, when someone says they like their coffee piping hot, they’re really saying they don’t want to fully taste the brew because our taste buds don’t work as well with hotter substances. You can also hack your perception by using the front—rather than the sides or back—of your tongue to taste the coffee. Even more intriguing, by drinking your coffee from a glass rather than white ceramic, you can change your perception of how sweet the coffee tastes (and yes, this works very well).

IF YOU HAVE A SENSITIVE STOMACH
Use a filtered brewing method and avoid using the French Press or AeroPress. Coffee made using these two methods yields a suspension of coffee particulate, and those particles will continue to extract caffeine in the stomach, forming acid. Instead, use a paper filter to brew your coffee. The use of filtered water can also aid in pH balance.
