Karnataka, the country’s largest coffee-growing state, has made a modest start by producing luxury coffee on a small scale. India, Asia’s third-largest producer and exporter of coffee, has begun producing the world’s most expensive coffee, made from civet cat poop and India is all set to welcome the grand entry of civet coffee. Because of the unusual method of producing such a coffee, Civet coffee, also known as Luwark coffee, is expensive. It is made from coffee beans digested by the civet cat.
This cat’s faeces are collected, processed, and sold. It is expensive because it is claimed to be more nutritious, as well as the high cost of obtaining animal droppings, wastage during processing, and quality certification. Civet coffee, a luxury drink popular in the Gulf countries and Europe, is sold for Rs 20,000-25,000/kg in the international market. In the country’s largest coffee-growing state, Karnataka, has made a modest start by producing the luxury coffee on a small scale.
“Civet cats eat the flesh of coffee cherries rather than the bean. “The natural enzymes in the civet’s stomach enhance the bean flavour, which is why this coffee is unique,” Kiosk Kaffee experts explained. Now, farmers recognise the value of this coffee, and India can produce it in its natural form, as opposed to other countries where civet cats are caged and force-fed coffee beans.
Civet Coffee Process:
Experts estimate that it takes a week to prepare the beans, depending on the weather. “The Luwak coffee process takes one week if it does not rain.”
When the beans are bathed in bright sunlight and clear skies, the end result is far superior. However, if rain clouds appear, they can be dried indoors, though the taste of the final beverage will be affected.
Part of what distinguishes this “special coffee” is how the beans are gathered in the wild – in the droppings of the unusual, cat-like civet, which eats the coffee cherries hanging from tree branches at night and poops them out, relieving itself of the pits by morning.
“Coffee experts go to the coffee trees at night, pick the cherries, and swallow and process them in the stomach. When they eat, they eat the coffee’s fruit, not the seed inside. They consume the reddish, light brown fruit, and the tough skin (seed) is excreted in their faeces “Experts stated.
The coffee seeds are washed in hot water and boiled after they have exited the animal’s digestive system.
The boiled seeds are laid out to dry, preferably in the sun. The strong skin of the seed is removed after drying, and the beans are extracted from within.
